So what happens when you buy a 3 lb. container of strawberries? You eat them non-stop before they go bad. And try to find new ways to eat them without going crazy. And that’s where this recipe was born.

This is a pretty interesting smoothie – it’s not very smooth per say….but it is good – and filling. Which is important.

Here’s what you’ll need: oatmeal, strawberries, blueberries, a banana, coconut milk, vanilla extract, and salt. Oh, and a blender or food processor. I had to go the food processor route – my blender broke in the move!

Alright…..throw everything into the food processor: 1 banana, 2 cups of strawberries (about 10 strawberries), ½ c. blueberries, ½ cup of oatmeal, 1 cup of coconut milk, ¼ t. vanilla extract, ¼ t. salt. Blend that baby up! Let it go for a while — to help it be a little bit more smooth.

This makes 4 cups – 2 servings. Yum.

Berry Oatmeal Smoothie 
Serves 2

Ingredients:
1 banana
2 cups of strawberries (about 10 strawberries)
½ c. blueberries
½ cup of oatmeal
1 cup of coconut milk (sub almond or soy)
¼ t. vanilla extract
¼ t. salt.

Directions:

1. Toss all ingredients into blender or food processor. Blend for 1 minute at high speed. Pout into 2 glasses – serve immediately. Enjoy!
